Brownie Cookie Cake (Pizza) with All the Trimmings
Also known as brownie pizza, this is perfect for a kid's birthday party. Or an adult who likes sweet, gooey desserts. Not that there are any adults like that around...
Ingredients
- Crust:
- 2 ounces semisweet chocolate
- 2 ounces unsweetened chocolate
- 3/4 cup (1 1/2 sticks) unsalted butter, at room temperature
- 1 cup sugar
- 4 eggs
- 3/4 teaspoon vanilla extract
- 1/2 teaspoon coconut flavoring or extract (optional)
- 1 cup all-purpose flour
- 1/4 teaspoon baking powder
- 1/8 teaspoon salt
- Toppings:
- 1/2 cup white chocolate chips
- 1 cup semisweet chocolate chips
- 1/2 cup grated sweetened coconut
- 1/2 cup sliced almonds, or to taste (optional)
- 1/2 cup maraschino cherries, drained
- 1 1/2 tablespoons butter
Steps
Preheat oven to 350 degrees F. Line an 11- to 12-inch pizza pan or round baking pan with a double thickness of aluminum foil, letting foil extend over sides of pan for easy removal of brownie pizza. Lightly grease foil.
Place semisweet and unsweetened chocolates and butter in a microwave-proof bowl or in the top of a double boiler. Microwave on medium-high (80 percent) or heat over hot water, stirring occasionally, until melted and smooth. Let cool.
Beat sugar and eggs on high speed until light. Add vanilla and coconut flavoring. Spoon in cooled chocolate mixture and blend well. Stir in flour, baking powder, and salt to make a smooth batter.
Carefully spoon batter into the prepared pan. Smooth with the back of a spoon. Set in the center of the oven. Bake for 20 minutes or until a toothpick inserted into the center of the brownie comes out dry.
Remove brownie crust from the oven and set on a wire rack. Sprinkle hot crust with white chocolate chips, 1/2 cup semisweet chocolate chips, coconut, and almonds; scatter cherries decoratively over top of pizza.
Place remaining 1/2 cup chocolate chips and butter in a microwave-proof bowl or in the top of a double boiler. Microwave on medium-high (80 percent) or heat over hot water, stirring occasionally, until melted and smooth. Drizzle melted chocolate from a teaspoon over the top of the pizza. Cool pizza.
To serve, set brownie pizza on a serving dish. Cut into wedges.
