Cashew Bars with Candied Papya

- 1/2 cup unsalted butter, softened 1/2 cup cashew butter (see Tips) 1/2 cup packed light brown sugar
- 1/3 cup granulated sugar 1 egg 1 teaspoon vanilla extract
- 1/4 to 1/2 teaspoon salt
- (see Tips) 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1 3/4 cups all-purpose flour
- 1/2 cup chopped
- roasted cashews 1/2 cup finely diced candied or dried papaya
Steps
Preheat oven to 350 degrees F. Lightly butter or
spray a 10-by-15-inch pan. Cream butter and cashew butter with sugars until
light. Beat in egg and vanilla.
Whisk together flour, salt, baking soda and cinnamon. Stir into butter mixture until well incorporated. Stir in cashews and papaya.
Spread dough evenly in prepared pan. Bake for 20 to 25 minutes, or until golden. Cut into rectangles when cool.
