Chocolate Madeleines

Madeleine (often spelled Madeline) is a girl's name in French, but it also is the name of a small, delicate, shell-shaped sponge cake which is eaten like a cookie. Madeleines are baked in a special pan to give them the scalloped shell shape.

  • 1 ounce bittersweet chocolate, coarsely chopped
  • 10 tablespoons (1 stick plus 2 tablespoons) unsalted butter, cut into bits 4 eggs, at room temperature
  • 3/4 cup sugar
  • 1 cup all-purpose flour
  • 2 tablespoons unsweetened cocoa
  • 1/2 teaspoon salt
  • 6 ounces white chocolate, roughly chopped

Additional tips
Store: In a covered (not airtight) container, or wrapped on a plate. These are best served very fresh.
