- 1/4 cup (1/2 stick) unsalted butter or margarine, at room temperature
- 1/4 cup vegetable shortening
- 1 cup packed dark brown sugar
- 1/4 cup orange juice
- 1 egg
- 3/4 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/8 teaspoon ground cloves
- 1 3/4 cups all-purpose flour
- 1/4 teaspoon salt
- 3/4 cup golden raisins
- 3/4 cup chopped pecans or walnuts
- 1/2 cup chopped candied orange peel
Steps
Preheat oven to 375 degrees F. Lightly grease or spray cookie sheets.
Cream butter or margarine and shortening with sugar on medium speed until light, about 2 minutes. Mix in orange juice, egg, cinnamon, nutmeg, and cloves. Stir in flour, salt, raisins, pecans, and candied peel. Batter will be somewhat stiff.
Drop batter by rounded teaspoonfuls onto cookie sheets, spacing cookies about 1 1/2 inches apart. Press cookies slightly with the bottom of a glass dipped in sugar.
Bake cookies in the center of the oven for 12 to 14 minutes, or until golden on the bottom. Cool cookies on cookie sheets for 1 to 2 minutes, then remove to a wire rack to cool completely.
