Lacy Oatmeal Cookies with Dried Cranberries
Flat, lacy and chewy, these oatmeal lace cookies satisfy a sweet tooth.
Ingredients
- 1/2 cup (1 stick) unsalted butter, at room temperature
- 1/2 cup packed light brown sugar
- 1/2 cup granulated sugar
- 1 egg
- 1 cup all-purpose flour
- 1 cup old-fashioned oats
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1/4 teaspoon salt
- 1 tablespoon milk
- 1 cup dried cranberries
Steps
Preheat oven to 350 degrees F. Lightly grease or spray cookie sheets.
Cream butter on medium speed until light. Add sugar and cream until smooth and light, about 2 minutes. Add egg and combine. Mix in flour, oats, baking powder, baking soda, salt, and enough milk to make a lumpy batter. Mix in dried cranberries.
Drop cookies by teaspoonfuls onto cookie sheets, 2 inches apart. Bake in the center of the oven for 5 to 8 minutes. Cookies will be golden brown on the bottom and firm on the top. Remove to a wire rack to cool.
