Lemon Anise Thins

  • 1/2 cup (1 stick) unsalted butter, at room temperature
  • 3/4 cup sugar
  • 1 tablespoon finely grated lemon zest
    1/4 teaspoon salt
  • 1 cup all-purpose flour
  • 2 teaspoons anise seed
    Additional sugar for sprinkling
Steps
Cream butter and sugar on medium speed until light. Beat in lemon zest and salt. Stir in flour to make a stiff dough. Stir in anise seeds. Wrap tightly in plastic wrap and chill for at least 1 hour, until firm.

Preheat oven to 350 degrees F. Lightly grease or spray baking sheets.

On a lightly floured board or pastry cloth, roll out dough to slightly less than 1/8-inch thickness. Use a biscuit cutter to cut into 2-inch rounds. Sprinkle lightly with sugar.

Bake in the center of the oven for about 10 minutes, or until pale golden. Remove immediately to wire racks.
