Russian Walnut Tea Cakes
Ingredients
- 1 cup (2 sticks) unsalted butter, at room temperature
- 1/2 cup sifted confectioners' sugar
- 2 1/4 cups sifted all-purpose flour
- 1/4 teaspoon salt
- 3/4 cup finely chopped walnuts
- 1 cup confectioner's sugar, to roll warm baked cookies
Steps
Cream butter and 1/2 cup sugar until light. Mix in flour, salt, and walnuts. Gather dough together and form into a ball shape. Cover with plastic wrap or aluminum foil and refrigerate for 45 minutes.
Preheat oven to 400 degrees F. Lightly grease or spray cookie sheets.
Roll small pieces of dough in your hands to form 1-inch balls. Set cookies on pan, 1 1/2 inches apart. Bake in the center of the oven for 10 minutes or until lightly golden on the bottom and firm to the touch on the top.
Spread 1 cup confectioners' sugar on a plate. Roll hot cookies in sugar and set on a wire rack to cool. When the cookies are cool, again roll in sugar.
