Yield: 24 bars

Ingredients

  • 1 1/4 cups sifted all-purpose flour
  • 3/4 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon salt
  • 1/4 cup (1/2 stick) unsalted butter, at room temperature
  • 3/4 cup sugar
  • 1 egg
  • 1/2 cup unsweetened applesauce
  • 1/2 cup golden raisins

Instructions

  1. Preheat oven to 375 degrees F. Lightly grease or spray a 7-by-11-inch baking pan.
  2. Sift together flour, baking soda, cinnamon, allspice, and salt. Set aside.
  3. Cream butter and sugar on medium speed. Add egg and continue beating until light. Stir in flour mixture and applesauce until combined. Stir in raisins.
  4. Spoon batter into prepared pan. Bake in the center of the oven 25 to 30 minutes, until cookies are golden and a cake tester inserted in the center comes out clean. Cool in pan, then cut into bars.
