Rich
in carbohydrates and low in fat, these bars are meant for an energy boost when
you're on the trail, on your bike, or even in your garden. They freeze well,
and cost less than commercial energy bars.
Ingredients
- 3/4 cup peanut butter
- or other nut butter
- 3/4 cup honey
- 1/2 cup nonfat dry milk
- 1/3 cup skim milk or water
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup wheat germ
- 2 cups rolled oats
- 1/2 cup whole wheat flour
- 3/4 cup currants or raisins
- 2 tablespoons sesame seeds
Instructions
- Preheat oven to 350 degrees F. Lightly grease or
- spray a 10-by-15-inch baking sheet with sides.
- Cream peanut butter and honey with dry milk
- until smooth. Stir in baking soda and salt, then remaining ingredients to make
- a stiff dough; it may be easiest to knead in ingredients with your hands.
- With oiled hands, spread mixture evenly in
- baking sheet. Bake in the center of the oven for 10 to 12 minutes, until
- golden. Let cool, then cut into rectangles.
