Banana-Coconut Bars

Yield: 48 bars


Ingredients

  • Crust:
  • 1/2 cup (1 stick) unsalted butter, at room
  • temperature
  • 1/4 cup confectioners' sugar
  • 1 egg yolk
  • 1/8 teaspoon salt
  • 1/8 teaspoon ground allspice or nutmeg
  • 1 cup all-purpose flour
  • Topping:
  • 2 large or 3 medium bananas
  • Freshly squeezed lime juice
  • 3 eggs
  • 1 egg white
  • 1 cup sugar
  • 2 tablespoons dark rum, or 1 teaspoon rum
  • extract
  • 2 tablespoons flour
  • 1/4 teaspoon baking powder
  • 1 cup shredded sweetened coconut, preferably
  • toasted

Instructions

  1. Preheat oven to 350 degrees F. To make crust: Cream butter and sugar until light. Beat in egg yolk, salt, and allspice. Stir in flour to make a fairly stiff dough.
  2. Press dough evenly over bottom of an ungreased 9-by-13-inch pan; crust will be thin. Bake for 12 to 14 minutes, until golden.
  3. Peel bananas and cut into very thin slices. Dip in fresh lime juice, then arrange banana slices evenly over hot crust, covering the entire crust and not overlapping slices.
  4. To make filling: Beat eggs, egg white, sugar, 2 tablespoons lime juice, and rum until smooth. Beat in flour and baking powder, then coconut. Pour over crust and bananas.
  5. Return to oven for 20 to 25 minutes, until filling is completely set. Let cool completely, then cut into bars.
