Benne (Sesame) Wafers

Ingredients

  • 6 tablespoons butter, at room temperature, cut in 1/2 -inch pieces
  • 3/4 cup packed light brown sugar
  • 1 egg
  • 1/4 teaspoon baking powder
  • 1/2 cup plus 2 teaspoons all-purpose flour
  • 1/4 cup toasted sesame seeds (benne)
  • 1/2 teaspoon vanilla

Instructions

  1. Line 2 cookie sheets with aluminum foil. Preheat oven to 325° F.
  2. Using electric mixer, cream butter and sugar together. Mix in egg, baking powder, flour, sesame seeds and vanilla.
  3. Drop batter by teaspoonfuls onto cookie sheets, spacing 2 inches apart.
  4. Bake cookies on the center rack in oven for minutes or until they are
  5. firm and just beginning to brown around edges. The cookies brown
  6. quickly so keep an eye on them.
  7. Let cool on pans for 5 minutes, then remove to wire racks to cool completely.
