Blond Brownies

Yield: 16 brownies

These butterscotch brownies make a great dessert for family picnics.

Ingredients

  • 1/4 cup (1/2 stick) unsalted butter, melted
  • 1 cup packed light brown sugar
  • 2 eggs
  • 3/4 teaspoon vanilla
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup white chocolate chips
  • 1/2 cup golden raisins

Instructions

  1. Preheat oven to 350 degrees F. Grease and flour an 8-inch square baking pan.
  2. Pour melted butter in a mixing bowl. Stir in sugar, eggs, and vanilla. Whisk together flour, baking powder, and salt. Stir into butter-sugar mixture. Stir in white chocolate chips and golden raisins. Batter will be thick.
  3. Spoon batter into prepared pan and smooth top of batter with back of spoon.
  4. Bake in the center of the oven for 35 minutes or until a tester inserted in the center of the brownies comes out dry.
  5. Cool brownies in the pan. Cut and remove while still slightly warm, then remove to a wire rack to finish cooling.
