Burnt Butter Honey Thins

Yield: 50 to 54 cookies


Ingredients

  • 1/2 cup Burnt Butter, at room temperature
  • 1/2 cup honey
  • 1 tablespoon finely grated orange zest
  • 1 teaspoon finely grated lemon zest
  • 1/8 teaspoon salt
  • 1 3/4 cups all-purpose flour

Instructions

  1. Cream butter and honey on medium speed until blended. Beat in orange and lemon zests, and salt. Stir in flour to make a medium dough. Wrap dough in plastic wrap or foil and refrigerate at least 1 hour, or until firm enough to roll.
  2. Preheat oven to 350 degrees F. Lightly grease or spray cookie sheets.
  3. Roll out dough on a lightly floured board or cloth as thinly as possible--1/16 inch is ideal. Cut into 2-inch rounds with a biscuit or cookie cutter. Carefully transfer to cookie sheets. Bake in the center of the oven for about 10 minutes, or until golden on top. Let stand on cookie sheets for 1 minute, then remove to wire racks.
