Cashew Bars with Candied Papya

Yield: 48 bars


Ingredients

  • 1/2 cup unsalted butter, softened
  • 1/2 cup cashew butter (see Tips)
  • 1/2 cup packed light brown sugar
  • 1/3 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/4 to 1/2 teaspoon salt

  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1 3/4 cups all-purpose flour
  • 1/2 cup chopped
  • roasted cashews
  • 1/2 cup finely diced candied or dried papaya

Instructions

  1. Preheat oven to 350 degrees F. Lightly butter or
  2. spray a 10-by-15-inch pan. Cream butter and cashew butter with sugars until
  3. light. Beat in egg and vanilla.
  4. Whisk together flour, salt, baking soda and
  5. cinnamon. Stir into butter mixture until well incorporated. Stir in cashews and
  6. papaya.
  7. Spread dough evenly in prepared pan. Bake for 20
  8. to 25 minutes, or until golden. Cut into rectangles when cool.
