Ingredients
- 1/2 cup unsalted butter, softened
- 1/2 cup cashew butter (see Tips)
- 1/2 cup packed light brown sugar
- 1/3 cup granulated sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1/4 to 1/2 teaspoon salt
- (see Tips)
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1 3/4 cups all-purpose flour
- 1/2 cup chopped
- roasted cashews
- 1/2 cup finely diced candied or dried papaya
Instructions
- Preheat oven to 350 degrees F. Lightly butter or
- spray a 10-by-15-inch pan. Cream butter and cashew butter with sugars until
- light. Beat in egg and vanilla.
- Whisk together flour, salt, baking soda and
- cinnamon. Stir into butter mixture until well incorporated. Stir in cashews and
- papaya.
- Spread dough evenly in prepared pan. Bake for 20
- to 25 minutes, or until golden. Cut into rectangles when cool.
