Busia's Coffee Nuggets

Yield: 36 small cookies

Our friend Alan fondly remembers enjoying these dainty cookies as a child. They were a specialty of his maternal grandmother's ("Busia" is Polish for grandma). Not too sweet, they're also very popular with adults.

Ingredients

  • 1/2 cup (1 stick) unsalted butter or margarine, at room temperature
  • 3 tablespoons confectioners' sugar
  • 1 1/2 teaspoons powdered instant coffee
  • 1/2 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup finely chopped nuts
  • Confectioners' sugar for rolling

Instructions

  1. Cream butter, sugar, coffee, and vanilla until light and fluffy. Add flour and nuts and mix thoroughly to make a stiff dough. Chill dough for 1 hour.
  2. Preheat oven to 350 degrees F. Using 1 teaspoon dough per cookie, form into small balls.
  3. Bake on ungreased cookie sheets for 15 minutes, or until firm and golden on the bottom.
  4. While still warm, roll in confectioners' sugar.
