Our friend Alan fondly remembers enjoying these dainty cookies as a child. They were a specialty of his maternal grandmother's ("Busia" is Polish for grandma). Not too sweet, they're also very popular with adults.
Ingredients
- 1/2 cup (1 stick) unsalted butter or margarine, at room temperature
- 3 tablespoons confectioners' sugar
- 1 1/2 teaspoons powdered instant coffee
- 1/2 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 cup finely chopped nuts
- Confectioners' sugar for rolling
Instructions
- Cream butter, sugar, coffee, and vanilla until light and fluffy. Add flour and nuts and mix thoroughly to make a stiff dough. Chill dough for 1 hour.
- Preheat oven to 350 degrees F. Using 1 teaspoon dough per cookie, form into small balls.
- Bake on ungreased cookie sheets for 15 minutes, or until firm and golden on the bottom.
- While still warm, roll in confectioners' sugar.
