How to toast nuts

Toasting nuts really brings out their flavor, and will make cookies that contain nuts taste far better.

It's easy to toast pecans, almonds, walnuts and other nuts.

Preheat the oven to 350 degrees F.

Spread the shelled nut halves or pieces in a single layer on a cookie sheet with sides. Roast the nuts for 8 to 10 minutes, stirring once, or until the nuts start giving off a toasted aroma. (The general rule of thumb is that if you can smell the pecans roasting, they're done.) Be careful not to over roast them, or they will burn.

Pour into a bowl or onto a shallow plate and let cool.

Hazelnuts (filberts) are often skinned after being roasted. While they are still warm, rub the hazelnuts in a clean, dry towel; most of the skins should slip off.
