Ingredients
- 1/4 cup (1/2 stick) unsalted butter or margarine, at room temperature
- 1/4 cup vegetable shortening
- 1 cup packed dark brown sugar
- 1/4 cup orange juice
- 1 egg
- 3/4 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/8 teaspoon ground cloves
- 1 3/4 cups all-purpose flour
- 1/4 teaspoon salt
- 3/4 cup golden raisins
- 3/4 cup chopped pecans or walnuts
- 1/2 cup chopped candied orange peel
Instructions
- Preheat oven to 375 degrees F. Lightly grease or spray cookie sheets.
- Cream butter or margarine and shortening with sugar on medium speed until light, about 2 minutes. Mix in orange juice, egg, cinnamon,
- nutmeg, and cloves. Stir in flour, salt, raisins, pecans, and candied peel. Batter will be somewhat stiff.
- Drop batter by rounded teaspoonfuls onto cookie sheets, spacing cookies about 1 1/2 inches apart. Press cookies slightly with the bottom of a glass dipped in sugar.
- Bake cookies in the center of the oven for 12 to 14 minutes, or until golden on the bottom. Cool cookies on cookie sheets for 1 to 2 minutes, then remove to a wire rack to cool completely.
