Flat, lacy and chewy, these oatmeal lace cookies satisfy a sweet tooth.
Ingredients
- 1/2 cup (1 stick) unsalted butter, at room temperature
- 1/2 cup packed light brown sugar
- 1/2 cup granulated sugar
- 1 egg
- 1 cup all-purpose flour
- 1 cup old-fashioned oats
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1/4 teaspoon salt
- 1 tablespoon milk
- 1 cup dried cranberries
Instructions
- Preheat oven to 350 degrees F. Lightly grease or spray cookie sheets.
- Cream butter on medium speed until light. Add sugar and cream until smooth and light, about 2 minutes. Add egg and combine. Mix in flour, oats, baking powder, baking soda, salt, and enough milk to make a lumpy batter. Mix in dried cranberries.
- Drop cookies by teaspoonfuls onto cookie sheets, 2 inches apart. Bake in the center of the oven for 5 to 8 minutes. Cookies will be golden brown on the bottom and firm on the top. Remove to a wire rack to cool.
