No Bake Peanut Butter Cookies

Yield: 18 cookies

These peanut butter cookies are not as achingly sweet as many no-bake cookies, which is precisely what we like about them.

Ingredients

  • 1 cup creamy peanut butter
  • 3/4 cup confectioners' sugar
  • 1/2 cup finely crushed plain saltines or similar crackers (preferably unsalted)
  • 1 teaspoon vanilla extract
  • 1 to 3 tablespoons evaporated milk, as needed
  • 1/2 cup honey-roasted peanuts, coarsely crushed

Instructions

  1. Combine the confectioners' sugar and cracker crumbs in a medium bowl. Add the peanut butter and vanilla and mix well with a spoon. Mix in enough milk to make a dough that's firm but not too dry. Let stand for 5 minutes (the peanut butter will absorb more of the crumbs), then taste a piece; if it seems too dry, add another teaspoon or two of milk.
  2. Roll 1 tablespoon of dough into a ball, then roll partly in the crushed peanuts, slightly flattening the dough as you do. Place on a plate.
  3. Repeat with the remaining dough and peanuts. If you'll be storing these for more than a couple of hours, it's a good idea to refrigerate them.
