Pecan Praline Cookies

Yield: 40 cookies


Ingredients

  • 1 1/2 cups Pecan Praline
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup (1 1/2 sticks) unsalted butter, at room temperature
  • 3/4 cup packed light brown sugar
  • 1 egg
  • 1 1/2 teaspoons vanilla extract

Instructions

  1. Preheat oven to 375 degrees F. Lightly grease or spray cookie sheets.
  2. Crush the praline into fairly coarse pieces and set aside.
  3. Whisk together the flour, baking soda and salt; set aside.
  4. Cream butter and sugar on medium speed until light, about 2 minutes. Beat in egg and vanilla. Beat dry ingredients into butter-sugar mixture to make a soft dough. Stir in pecan praline.
  5. Drop dough by tablespoonfuls onto cookie sheets. Bake for 9 to 11 minutes, or until light golden. Let cookies stand on baking sheets for a minute, then remove to wire racks to cool.
