Rocky Road Brownies

Yield: 16 brownies

Need something to take to the family reunion potluck? Gooey and sweet, these brownies are sure to disappear fast.

Ingredients

  • 4 ounces unsweetened chocolate, chopped
  • 1 cup (2 sticks) unsalted butter, cut into pieces
  • 1 1/2 cups sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 1/4 cups all-purpose flour
  • 3/4 cup chocolate chips (semisweet or milk chocolate, as you like)
  • 3/4 cup chopped pecans
  • 1 cup miniature marshmallows

Instructions

  1. Preheat oven to 350 degrees F. Spray or lightly grease a 9-inch square baking pan.
  2. Place chocolate and butter in a microwave-proof bowl. Microwave on high for 1 minute. Stir. If chocolate is still quite lumpy, return to microwave and heat on high, in 10-second increments, just until the chocolate is warm enough to melt when stirred thoroughly.
  3. Stir in sugar, then eggs, vanilla, and salt. Stir in flour just until incorporated.
  4. Spoon batter into pan and smooth the top with the back of a spoon. Scatter chocolate chips, pecans, and marshmallows over the batter.
  5. Bake for 25 to 30 minutes, or until brownies are firmed and set and marshmallows are golden. Let cool in the pan, then cut into squares, using a sharp knife dipped in hot water.
