Toasted Pine Nut Cookies

Yield: 40 cookies


Ingredients

  • 1 cup (2 sticks) unsalted butter, at room temperature
  • 1 cup granulated sugar
  • 1/3 cup packed light brown sugar
  • 2 eggs
  • 1 1/4 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup butterscotch morsels, or white or chocolate chips
  • 2 cups pine nuts, toasted

Instructions

  1. Preheat oven to 350 degrees F. Lightly grease or spray cookie sheets.
  2. Cream butter and sugars on medium speed until light, about 2 minutes. Add eggs, one at a time, beating well after each addition. Stir in vanilla. Whisk together flour, baking soda, and salt, then stir into batter to make a soft dough. Stir in chips and toasted pine nuts.
  3. Drop cookies by tablespoonfuls onto cookie sheets. Leave 2 to 3 inches between cookies, as they spread. Bake in the center of the oven for 12 to 15 minutes. Cookies will be golden on the bottom and around the edges.
  4. Cool cookies on cookie sheets for 2 to 3 minutes, then remove to wire racks to cool completely.
