Ingredients
- 1 cup (2 sticks) unsalted butter, at room temperature
- 1 cup granulated sugar
- 1/3 cup packed light brown sugar
- 2 eggs
- 1 1/4 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup butterscotch morsels, or white or chocolate chips
- 2 cups pine nuts, toasted
Instructions
- Preheat oven to 350 degrees F. Lightly grease or spray cookie sheets.
- Cream butter and sugars on medium speed until light, about 2 minutes. Add eggs, one at a time, beating well after each addition. Stir in vanilla. Whisk together flour, baking soda, and salt, then stir into batter to make a soft dough. Stir in chips and toasted pine nuts.
- Drop cookies by tablespoonfuls onto cookie sheets. Leave 2 to 3 inches between cookies, as they spread. Bake in the center of the oven for 12 to 15 minutes. Cookies will be golden on the bottom and around the edges.
- Cool cookies on cookie sheets for 2 to 3 minutes, then remove to wire racks to cool completely.
