Toffee Squares

Yield: 48 bars

Toffee bars are an essential part of Ginger's Christmas cookie collection. They're easy to make, they taste great, they look good, and everyone loves them.

Ingredients

  • Crust:
  • 1 cup (2 sticks) unsalted butter, at room temperature
  • 1 cup packed light brown sugar
  • 1 egg yolk
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 cups all-purpose flour
  • Topping:
  • 7 to 8 ounces top-quality milk chocolate, broken into pieces
  • 1 cup chopped roasted almonds

Instructions

  1. Preheat oven to 350 degrees F.
  2. Cream butter and sugar until smooth. Stir in egg yolk, vanilla, salt, and flour to make a stiff dough. Pat dough evenly over bottom of an ungreased 9-by-13-inch baking pan. Bake in the center of the oven for 20 minutes, or until golden.
  3. Remove from oven and scatter milk chocolate pieces over crust. Return to oven for 1 minute. Remove again and spread chocolate evenly over crust. Sprinkle with almonds. Let sit at cool room temperature until completely cool, then cut into bars.
