Toffee bars are an essential part of Ginger's Christmas cookie collection. They're easy to make, they taste great, they look good, and everyone loves them.
Ingredients
- Crust:
- 1 cup (2 sticks) unsalted butter, at room temperature
- 1 cup packed light brown sugar
- 1 egg yolk
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 2 cups all-purpose flour
- Topping:
- 7 to 8 ounces top-quality milk chocolate, broken into pieces
- 1 cup chopped roasted almonds
Instructions
- Preheat oven to 350 degrees F.
- Cream butter and sugar until smooth. Stir in egg yolk, vanilla, salt, and flour to make a stiff dough. Pat dough evenly over bottom of an ungreased 9-by-13-inch baking pan. Bake in the center of the oven for 20 minutes, or until golden.
- Remove from oven and scatter milk chocolate pieces over crust. Return to oven for 1 minute. Remove again and spread chocolate evenly over crust. Sprinkle with almonds. Let sit at cool room temperature until completely cool, then cut into bars.
